Keep your centerpieces natural and simple, too. Baskets of wildflowers with bows and ribbons are perfect along the buffet tables and at the banquet tables.
If you want something a little more 'country cute', you can fill watering cans with bouquets of wildflowers. Or, for a touch of the Old West, pick up vases in the shape of a cowboy boot to hold daisies, Queen Anne's lace and goldenrod.

Skip the champagne fountain for a Texas country wedding - it just doesn't work well with ribs and steak. Instead, fill a couple of huge cans with cracked ice and cold beer. Pick a couple of great table wines - in a jug, of course - from a bottler like Three Thieves, who pick up some of the best varietals on the bulk wine market and bottle them up in good old country jugs.
